This was something we put together after grocery shopping. Typically, if we are grocery shopping before we’ve had dinner, we will pick up some fresh fish. And usually, it is one of our favorites, cod. We were in the asian section and picked up several packages of dry rice noodles to try for lunches and decided to get a package of fresh rice noddles for dinner.
The cod was seasoned with salt, pepper, smoked paprika, and a bit of sriracha seasoning, and topped with a pat of butter and some sliced leeks we had leftover from another dish. I also greased the glass baking dish with some solid bacon fat for some added flavor.
The asian rice noodles were done with a miso paste broth with some sliced scallions, sliced leeks and flaked dried seaweed.
Very tasty and something different.
