Sausage, escarole, and bean pasta

This dish is something we used to have quite often, but we had forgotten about it since we had cut gluten from our diet in the past 2-3 years.  The flavors of each ingredient really come together and contrast with each other to make this a tasty dish with different textures throughout.  The kids also love it.  You could easily substitute spinach for the escarole and your bean of choice.  The original recipe listed cannellini beans, but we substituted pinto beans here since we didn’t have cannellini available.

Great comfort food for a cold night!
