John: Dinner tonight was a rib eye steak with roasted potatoes and steamed broccoli. The steak recipe is something I picked up from a cooking site a couple of years ago. The steak is made in a cast iron pan on the stove and in the oven. I put the cast iron pan in the oven at room temperature and turn on the oven and set the temperature to 500 degrees. When the oven hits 500 degrees, I take the pan out and immediate put it on the stove on high heat and put the steak in to sear. After searing for 2 minutes per side, the cast iron pan goes back in the oven at 500 degrees for 6 minutes, flipping the steak after 3 minutes. 6 minutes in the oven will give a medium well steak, while 4 minutes will give you medium rare, which is how we like it.
The rib eye steak is so flavorful on its own that I only season it with salt, pepper, and some onion powder before cooking. When the steak is done, you can add a pat of butter to melt or any other oil you like.
